The Deer Hunter is my personal favorite. It may not be classified as a war movie but it follows these guys from before through to after Vietnam. Fantastic movie.
Obviously, Saving Private Ryan. The Band of Bros. series is excellent.
I think others have answered the M.J. Fox question.

Bat 21 and Casualties of conflict were first rate video clips concerning the Vietnam conflict. i have not considered many Iraq conflict video clips. There are various WW2 video clips that i might want to record. various the added effective ones in my opinion are: Bridge on the River Kwai; The Longest Day; Saving inner most Ryan; The practice; the position Eagles Dare; Tora, Tora, Tora; halfway; A Bridge Too far; The Bridge at Remagen; Patton; the finished get away; The dirty Dozen; Stalag 17; Sink the Bismarck; Kelly's Heroes; The Dam Busters; The guns of Navarone.

"Band of Brothers" is really excellent. I have 4 uncles who fought in WWII and one in Korea...
Another one that people forget is "Casablanca." Sure, you're not going to see shot-em-up scenes and blood in your teeth but it was made at the time and they had to consider different endings because they didn't know how the war would go at the time! It's really cool when you put it in its context (which casual viewers do not do).
I also love "Happy Christmas, Mr. Lawrence" by Oshima. It's amazing about a POW camp and trying to break the soldiers there. http://www.imdb.com/title/tt0085933/
Have you seen "Flags of our Fathers?" It's recent and hey, personally, I really liked "Three Kings" about the Persian Gulf War.
