For example: If my legal name is David Smtih-Jones, can I be known as just David Smith socially and at work, but David Smith-Jones legally? I am male and was born with a hyphenated surname.

As long as you aren't using the name change for fraudulent reasons or to escape debt,you can call yourself anything you like.

Basically, you can call yourself whatever you want to as long as you don't do it for purposes of fraud. Identification to "prove" who you are could be a problem in some circumstances. If you change your name very much, you can use dba (doing business as) to make a transition.

It's your name. You can use it in anyway you want to.
