No, World War I did not end on November 11, 1918; just an armistice was signed. Armistices on their own do not end wars, they are just temporary cease-fire periods. Peace treaties end wars, and the Treaty of Versailles between Germany and the Allied and Associated Powers was signed on June 28, 1919, though it would still have to be ratified by various legislatures -- the United States never signed the treaty, its war with Germany was officially concluded in 1921 I think.

Anyway, why did the armistice not come right at 5.00 AM? Very simple -- both sides needed the six hours to communicate the message to thousands of units and millions of soldiers.

Because stopping armies is not like turning off a switch, especially in the days when the "state f the art" for communications was carrier pigeon and runner/messenger.
The Armistice ending the war was signed, but the termination time was set for 11 am to give the officers time to brief the men that morning, and get the word out to all of their troops (after all, if you told them the night before, there'd be nobody in the trenches come morning!).
