I think working so close together for months at a time can definitely spark a crush or a fling, but when there are genuine feelings involved, it just kind of happens. Big A list actors [like Brad and Angelina] didn't need the publicity, they're two of the most famous people in the world, even without them ever being romantically involved, they were still famous. Same thing with Ben Affleck and Jennifer Lopez, they were super famous before dating and didn't need the publicity and in the end it worked against them both in their movies and in their personal lives. Work place romances happen in every day life as well, most married couples meet through work or went to school together.

Movie-making is tense, lengthy, exacting, and exceedingly tedious. By the time you've gotten through twenty scenes of twenty takes each, you've either learned to love or hate each other. In either case, professionalism would tend to dictate that this shouldn't result in any sort of liason, but actors are generally long on looks and short on self-confidence, and only someone who has gone through the same experience can really understand this. Ergo, they tend to date, move in with, and occasionally marry each other, often unwisely.
Now of course studio publicists may well set up 'dates' between the leading man and lady, but it's typically up to the leading man and lady whether they're going to take any of this seriously. Usually they'll play along with the drama, including planted conflicts with ex's and all the rest.
The trouble with this sort of thing is that some actors--the kids, most often--can be blur the border of real and make-believe, especially if hard partying is involved somewhere.
It's of some value to recall that actors and actresses are very driven, and for all their talent many of them are somewhat short on social skills. They can easily make bad decisions about life and love.

It's a good question with a serious answer. New Scientist magazine recently did a collection of articles on Romance and Love. One of their stories looked at the 'triggers' for attraction. They reported that folk who were wired up showed the same brainwave patterns as real lovers when they were asked to gaze continuously into a stranger's eyes (of their preferred partner gender). That's to say, that going 'through the motions' of being in love (as actors do), triggers the feelings. The beautiful part about the experiment is that two of the couples involved (remember they were strangers to each other) started dating and got married.
But - in case you were planning on staring into the eyes of a beautiful stranger and having them fall in love with you - remember that both parties have to agree do the gazing thing, and it's pretty hard to persuade someone to gaze into your eyes (unless of course you ask them to help you find a foreign object lodged in your eye...)
The other thing about actors is that most of them have such monstrous ego's that the only people who will tolerate them are other actors. That and the odd hours they keep, and that film shoots are often in exotic locations away from 'other influences' (such as her husband or his wife..). It's also been suggested that a slight level of danger causes elevated emotions, which if shared by someone else can lead to greater bonding between them (hence the scary 'tunnel of love' thing in the fun fairs).

Not publicity. They started dating as they are exposed to each other during the filmmaking (emotionally, not physically). And therefore they know each other better. It's like stuff in real life. A male have got to approach a female he likes and they have to know each other better before dating. In the celebritiy industry, the actors worked with each other and they know each other better. Furthermore actors and actresses are mostly charming. So, when the female like the male and the male likes the female, they start dating

Maybe beacuse they are with that Co-star for months at a time...Plus then they do the steamy love scenes over and over, They grow attached and want something more...Or are just horny and want press!? possibly
