Depends on what you want to do!

To fan the flames, Cinnamon schnapps

To compliment and contrast the fire, ice cold Beer/Soda

To douse the fire, (and ease the heat in the morning) Milk

I like chili, I love the heat from it. So milk or any lactose based drink would kill the heat, which is not something I'd enjoy.

So I opt for soda, usually a dark cola to go with chili, or a good light beer that's very cold.

Any drink containing dairy is very good for soothing the stinging sensation in the mouth caused by chilli. It puts a lining on the tongue and also the gut and takes away the burning feeling.

Another thing worth trying is eating peices of cucumber. It works really well!

Ice Water. Anything Else would take the flavor of heat (chili) away from the meal. You are probable eating something spicy, because you like it, so why take away the flavor.

Hot mineral water or plain hot tea.
As a regular extra hot food eater, there is also another alternative, you can always eat something salty after eating something hot. The saltiness will sweep the hot away.

Always works for me.
