What ever symbol they use as there signature. That is why sometimes they say put you mark here instead of sign here. But since most people who are illiterate in the US know how to write there own name it does not come up much here.

Some illiterate people know just enough to know how to sign their name. Others have a special "mark", like the letter X.

Usually with an x or a personal mark, which is then witnessed by another person who knows them and who can write. This person signs in testament of their mark. A sort of a Notary Public.
