I think the greatest thing to tell her is the true fact that you began in January looking for the perfect word to describe how amazing she is and that a month later you still haven't found it!!! That's the truth and it would be sweeter than anything we could make up about her!
Second question: what t get her for V day: Get her a pair of earrings. Girls love jewelery, but because a ring is too forward, earrings would be personal enough to be special and not as routine as flowers or candy.

She's a magnetic person, someone people are drawn to because she is so wonderful. For Valentine's day take her on a romantic picnic just the two of you, and then, if you're sure, and 100% sure that she's the one give her a promise ring or an engraved locket with both your names on it. Or a charm bracelet, and put a charm on it for how long you've been together tell her you'll keep adding a charm for each month you're together. When thinking Valentine's day, think something that won't die in a couple of days. Buy her, her favorite flowers and watch the sun come up.....good luck sweetie!

Apparently this woman makes your soul soar and your spirit sing. How wonderful for you. Congrats! Writing your feelings on a nice one page note (so that she can frame it) would be very romantic.
