Make sure you are staying on the grounds at one of the Disney hotels. All of them have pretty good shuttle services to all of their attractions. If you want to go to Sea World or Universal Studios, you can get a ride there. As long as you are on the grounds, you can't go wrong.

All of the Disney Resorts have their own transportation that you can use to get anywhere on Disney property. Most nearby hotels have a good shuttle service to Disney World, Universal, or Sea World.
However, if you'd like to visit a beach or Kennedy Space Center while you're in Orlando, you will need a car mode of transportation.

Some great nearby hotels which have shuttle services are the Royal Plaza, located by Downtown Disney; The Sheraton Safari Resort accross the street from Downtown Disney, and the Best Western Lakeside, located off Hwy 192 in Kissimmee.

The Disney World hotels are the only good way to go. If you stay at a hotel off property you will end up wishing you hadn't, I've tried it with more than one hotel. I have also tried staying at the Disney hotels and would definatly recomend them. If you don't mind spending the extra money and really like the Magic Kingdom then I would recomend Wilderness Lodge or the Fort Wilderness Cabins they have transportation by boat as well so you have to wait for less time to get to the Magic Kingdom. Otherwise any Disney hotel will do fine. If you stay with Disney you will get complimentary shuttle service not only to all Disney resort and theme park locations but also to and from the airport they will even pick up your luggage at the airport and take it to the hotel for you. If you stay with Disney you will have much more time at the parks and less stress. Plus if you stay with them you also get magic hours which means that differient parks depending on the days are open later or earlier to you than the general public so there will be much smaller crowds then.

For a few extra bucks I would upgrade to the one snack, one quick serve and one sit down. Many of the quick serves are very basic meals such as small salad, pizza, snack and a drink. Or chicken fingers, fries, snack and drink. There are a few places where you can get better food but they are few and far between. With a sit down you can get a very nice meal each day be it breakfast, lunch or dinner. We always get that meal plan and always save a few hundred dollars. I do not know how you normally eat but a week of nothing but quick serves and snacks would make me sick. As far as the time you are going it is a great time to go. We always go within the first two weeks of May. The weather is warm but not too hot and there are people but it is after spring break and before summer. Lines are not bad just know if you go at the high point of the lunch or dinner hour you will be waiting a few people deep. Even then they have it down to a science and lines go very fast. In all honesty I would upgrade your meal plan, its not that much more. You will get better meals and still save ton of money. If you have your meals paid for, tickets, resort, air already paid for the only thing you will need extra money for is tips at nice sit down meals, maybe a few extra snacks and gifts you want to buy. $600 seems a bit high for 3 people but if you like to buy gifts and adult drinks then ok. My husband and I are luck to spend an extra $200 when we go. If you have other questions please ask.

Stay at any hotel on the Disneyworld resort. It has awesome free shuttle service, to and from all the parks, and hotels.

any hotel within the disney world compound offers a bus sride to all 4 parks, downtown disney, and both water parks.
you can find hotels ranging from stupidly expensive to family and budget friendly hotel like the pop century hotel.
