"Politically correct" means being sensitive to minorities, other nationalities, other religions, the beliefs of others, etc.

It also is used as a term to describe a great deal of silliness. For example, a garbageman is now a "waste techinician", a housewife is a "domestic engineer", a school bus is a "student transportation module", overweight people are described as "stout", rude people are lacking "social skills", unruly children are "socially unstable", foul language is "freedom of expression". You get the point.

To say politically correct means that you do not offend someone with what you are saying. For example, avoiding demeaning comments or ethnic slurs.
