What speakers do you have? If you have a normal stereo amplifier, just plug the red and white audio Cinch cable into your stereo.

If you have computer speakers with an audi jack that fits into a portable music player or your soundcard, you need an adapter cable, that changes Cinch to this audio jack. But in both cases you only get stereo sound.

I'd recommend to look for a Creative DTT 3500 surround set on ebay. They're pretty cheap and offer you true 5.1 Surround sound if you connect the Xbox with the optical output to this system.

I think the only way you can is to splice into the audio inputs to include your speaker wires is my guess.
