OK originally found its way into the English language as an abbreviation/joke. As a part of editorials in newspapers (I'm thinking sometime in the 19th century) in order to poke fun at someones spelling mistakes or even their opinions, responses would include an O.K., meaning All Correct. The joke is that O.K. is actually the wrong abbreviation for all correct, hence the condescending tone of the comment. Later on people started spelling it out as okay, but I'm not so sure about how that started. I would stick with the original O.K. because I'm an old fashion kind of guy.

Both are highly acceptable, between friends id just use ok, unless your mad at them for some reason, and okay shows a little bit of an attitude.
