These days there are several brands of quality cookware available that provide a nonstick surface and provide superior durability and heat evenly. Since I try to cook healthfully, I like nonstick surfaces which allow me to skip using fat or oil altogether in many cases. At the same time, I have no problem with using an iron skillet, but I'd say it's more for the sake of nostalgia/authenticity, such as with certain dishes and when you're camping out. Cooking in an iron skillet is also helpful if you need more iron (anemia, for example).

I've never used a cast iron skillet, have always used non-stick. Why? I honestly don't know, lol

Believe it or not I gave my cast iron away, I know, I know, I now use the non-stick. I purchased new cast iron but after trying to season it I found it was pretty useless.

If I go camping I use a cast iron skillet; otherwise, I use a non stick.

neither, the best way, healthiest , is stainless steal... also cast iron will wear the wrists out (if you cook all the time) it is very heavy for a woman to handle all day long cooking. Many agree that food tastes best out of cast iron though.

I like cooking in both but it really depends on what I'm cooking. Cast iron is perfect for something like fried chicken or if you fix a dish that you prepare on top of the stove but finish in the oven. I like the Ultrex brand of non-stick because you can use metal and it won't ruin the pot or pan.

I would love to have a cast iron skillet, the kind that my mother used to use before she discovered Teflon. Food did taste so much better from them. I guess it is because they were seasoned with lots of flavors.
