Because the hot water cooks the pasta by puffing it up, and since the water is hot when you put the pasta in, it doesnt stay in there too long. If you put pasta in right away, the pasta will suck up water until it starts to cook and you will have really soggy pasta.

it gets like gummy and sticks together if the water does not boil before you put in the pasta

If it isn't at a rolling boil the pasta will stick together in a big clump.

If you don't wait untill the water is boiling, chances are that the pasta can be overcooked.

Hey TEk girl........ if you put the the pasta in before it boils then the pasta will get real soggy,and not many ppl like it like that

...actually you don't !!

I always put it luke warm water......

Gently and caressingly forking it!!

Slowly ever so slowly bring it up to a slow simmer...

A drop of olive oil and a little salt at this time!!

Patiently lifting the strands ....from the bottom..

Bringing the noodles and water to a rolling boil..

Turn off heat..cover tightly...remove from heat..

Let sit for 12 minutes.......

Take a strand out of the water .....

And fling onto painted surface ...

Like a wall.. if it sticks ..its ready..

Drain...strain...don't RINSE !!!

Ice cube bath..to cool ...shock..and insure ...

Full body!!!...add ketchup and serve.....lol

i don't.

i like to do it that way. i have found there is less of a chance of soggy noodles that way. and if your stirring it..they don't stick together any less than if you waited. a little veggie oil helps them not to stick too.

personal preference maybe? im sure there is some technical reason..but i dont G-A-F, it tastes the same to me.

I think so it will cook faster instead of sitting in the water getting all starchy and what not.
