Well, the ship is normally steered by its rudder.
The rudder, is, in turn, controlled by the helm... the ship's wheel,
often acting through electric or hydraulic "power assist" on larger vessels.
These days, in very large, hi-tech vesseles, the traditional wheel has been replaced by something very like a joystick, and a computer-based control system to handle the steering

A ships wheel or helm. A tiller. A joy stick. These all tell the rudder or thruster to steer the ship or boat. The rudder being the most common means of steering a ship. Though some ships have pods that pivot the whole motor in any direction to steer the ship.

You use three types of systems to steer a ship. Follow up steering, which is the wheel. The rudder follows the order of the wheel. Non follow up (NFU), which is a joystick, or hand held control. The rudder moves as the NFU is jogged. Auto Pilot which when engaged will steer the vessel in a straight line for you.

Most of your larger ships today use joysticks like the ones you have on your video games. It's connected to the rudder through computers, and hydraulic pumps that turn the rudder. You also have some that use thruster (they use water jets) that are connected to pods on the bottom of the hull that can turn up to 360 degrees to steer but they are mostly used on the newer model tug boats.
