If you're looking for princess/fantasy books, try "The Enchanted Forest Chronicles," by Patricia C. Wrede. They follow the adventures of a princess that initially runs away from her home to avoid a forced marriage, and ends up as a dragon's princess. There are four books altogether, and they're some of my favorites.

Books by Tamora Pierce. Her Alanna series is my favourite. It's about a girl disguising herself as a boy to become the first female knight in 200 years. It doesn't really involve any princess' as such, but it does have a prince, squires, and King and Queen.

my favorite is two princesses of bamarre, I've read it dozens of times. dealing with dragons is a series about a princess that runs away to live with the dragons, but it looks like some one already wrote that.
