The colour depends on the certain crystal (meaning any gem, or stone, etc.) that a Jedi puts into his or her lightsaber (each padawan gets to construct his or her own lightsaber).

when a jedi is knighted he travels to a temple to choose a crystal that becomes the focal point of the light saber the different colors come from the color crystal that he chose the sith always use red and jedi's have green, blue and purple
