Generally to make them grow faster and to make them less aggressive and less dangerous to work with. With pigs, it also makes the meat more valuable because if not castrated the testosterone causes an off-flavour in the meat (called "boar taint") that makes meat from boars only acceptable for sausage where spices cover up the taste.

It keeps them docile, so they can be kept with or near females without worrying about them going into rut. Also, with cows, it makes them develop heavier, less muscular, more tender meat.

They grow bigger faster, and are far less aggressive. It's usually done for food production.
