What kind of science is he studying? If it is earth science I would think something abut volcanos would be something that would be of interest. He could try to make a model of a volcano out clay or paper and write a short report about volcanic activity. He could start doing his research here http://en.wikipedia.org/wiki/Volcano

something simple??
make a solar system with some interesting facts about each planet.. use paint and stryofoam
create the different layers of ground cover in a plastic bottle.. (grass, then dirt, gravel, rock.. etc....)
cut the world in half and label each layer of the earth (core, crust,....) paint and a styrofoam ball
grow a plant and explain the different stages of life (photosynthesis, nutrients,....)
write a news article on global warming
make a model plant or animal cell and label the individual parts
volcano
dinosaurs.. a timeline of the world since the big boom
there is sooo much to work with.. it's only 6th grade science.. hope these ideas helped!
