It partly depends upon what it is. Most canned and jarred foods, things stored at room temperature, will not taste quite as good or will have texture changes. Things might taste stale, like old potato chips. But they're still edible, at least up to a point.
Things that go in the fridge may be a little different. Some spoil relatively rapidly (like milk or meat). It's easier for bacteria to grow in something that's not environmentally sealed like a pack of chicken wings than it is for a can of beans.
Foods that contain moisture and are not preserved/canned properly can cause serious, even deadly sickness. Be careful how far you push the boundaries on this.

YOU expire... Just joking. Actually, it depends on what the food is. If it's expired chicken, for example, you risk salmonella. Different foods 'expire' at different rates for different reasons. The expiration date is for two reasons, 1- the food is at it's optimum quality and taste before this date, and 2- safety. You can use the expiration dates on crackers and on milk as examples. Milk is pretty obvious when it's expired. Gee, why not just have a sip of the sour curds? Because it's rank and you might end up with a stomach ache. Crackers on the other hand get stale after their expiration date and don't taste as crisp, but you probably wouldn't wretch if someone tried to jam one down your throat, either...

and many thing like vitamins are still good for another 2 yrs...

you can get a food poisoning - that means you can get sick to such an extent that you must go to the hospital and have your stomach pumped out (not something one can look forward to ;)
