Clean, neat appearance; be polite and courteous and always leave the bill so the customer doesn't have to wait and wait for it. I seem to have this problem a lot when I eat out alone, especially for breakfast. I don't drink coffee and dessert isn't an option for breakfast so the waiter/waitress should leave bill when delivering the food.

A good server (waiter or waitress) should be neatly dressed with no hair hanging over the tray of food. He should be courteous, mannerly, and listen carefully to the order. In addition, he should know the menu, be aware of how things are made and the ingredients used, and able to suggest alternates. He should not rush the customer, and also not wait too long to remove the finished plate. If there are after dinner mints that come with the meal, the customer should not have to request them.

number one is being able to read your guests and their needs. I can have 3 old ladies splitting a steak at one table, turn around and open a $300 bottle of wine for 6 business men at the table behind them and then serve 2 iced teas to the yuppie couple sitting at the table behind them. You have to be a chameleon. All must be done in a professional, and you guessed it, efficient manner. That's when you make the best money. Also, it's important not to judge people based on what they look like or are wearing. some of my best gratuities come from bikers, strippers or farm boys.

Nice appearance, hair tied back, clean, a good personality, a knowledge of what's in the food, how to pair wines, attentive, keeping water, iced tea, sodas, coffee filled, clearing plates, getting to-go boxes and the check in a timely manner.
