Whey do you cut a couple of inches off of the stems when you recieve a bouquet of flowers?

Actually, it is because the fresh cut on the stems allows for better water intake. Ideally, they should be cut on the bias to allow for more surface area from which to absorb water. Some say also to cut the stems while they are under water, so less air, more water will be absorbed.

For aesthetic reasons while arranging the bouquet and to allow the flowers to drink better.
