For example doctors and nurses.....can you think of any other industries?

I believe the building industry has a shortage of trained workers in trades such as plastering, plumbing, electrics etc. where a person might have been apprenticed years ago. A university education isn't necessary for this kind of work but that doesn't make the people who do it any less valuable. We seem to look down on people who "work with their hands" unless they are artists of some sort! Our education system works against youngsters who want to go into this sort of job.
