Yes, festivals in India is really very important. There are so many festivals in India from various religion that almost the whole year passes out celebrating. But Holi (the festival of colour) and Deepawali (the festival of light) are mostly enjoyed by more than half of India.During Holi the people put colours on each other and have lots of fun along with foods and drinks. Many people enjoy BHANG a kind of drink almost like hard drinks. They dance sing and enjoy all day. During this festival the weather is very pleasent, it's neither hot nor cold. During Diwali, the weather is again very nice, people basically in the northern India lit earthen lamps and candles, many prefer to put fancy lights too along with traditional lighting. Childern and adults loves the crackers. In this day people pray to Godess Laxmi Ji and takes her blessings. Food is again enjoyed a lot. People visit their relatives with sweets and have fun with everybody. Over all these festivals help people to spread love and respect to each other.

I think ya festivals are realy important in india
i think the best is always holi diwali mohram etc
but to me is the 15 august and 26 jan
because it is celebrated by the whole country

If you stay in an international hotel, then the food won't be too much of an issue. I too can't eat spicy food and went out on a 5 week trip with work. I mostly ate at the hotel. As to where you go, depends on what you are looking for. I found Mumbai fascinating. I guess if you want a typical holiday destination, then Goa is the place. I am sure you will be able to find suitable food.
