Beta is for a software which can be used, which is nearly fully functionnal but isn't fully tested so there is no garantee and you use it at your own risks.
Alpha is for a software which is still in development and is not fully functionnal, very buggy. Generally only used internally by the people who develop the product.
RC : Release Candidate : the software is ready to use, but it should be tested a last time to check there is no more bug.
RTM : Release To Manufacturer (or Ready To Market) is for a software which is finalized
RTM is also called Gold (because of the color of the disc on which it is burned to send it to the manufacturer)
So, the order is
Alpha
Beta
RC
RTM / Gold

BETA just specifies that the product is almost ready. It's just a warning to the customers.

Once the product is finished, no need to add alpha, gamma, etc.
Also the product won't be available to the customers until it is atleast in the BETA stage.

So they add BETA because that is the stage where the customer comes into the picture.

Alpha is first round testing - this is typically done IN-HOUSE, BEFORE THE FIRST PUBLIC RELEASE. Beta is the first PUBLIC RELEASE of the program, then Gamma, etc.

Alpha is the final release. Then you work backwards - beta for the pre-final, gamma for the pre-pre-final... etc.
