while finding the electric field intensity of a charge why do we always take a unit positive test charge and not a unit negative test charge?

It is by convention. Taking a negative test charge introduces another negative sign into the equation, which we do not like. It is much easier to do a positive unit test charge. Really there would be no difference except an extra negative sign and a little more work.
