what is the reason behind using black ink in most printed matter? can't we print most of them in green instead?

I think it shows up better against the white page and cheaper than color ink.

The black is cheaper and better for the eyes.

it's more legible, and black and white (one color) printing is cheaper than 4 colors

It is the darkest color, hence, easiest to see.
