It's because the cap on top is made to keep the air out. When air gets to the glue - the water in the glue evaporates causing it to dry and harden. Still, some air does get to the glue inside the bottle. If you use a bottle of glue that has been sitting around for a long time and use it up - if you cut it open you will find a layer of glue stuck to the inside of the bottle.

The interior of the bottle is so smooth, the polymers of the glue have no place to sink their line in to and hold on.

I'm assuming you are talking about plain old white glue, if thats the case, I think the answer is lack of air. Oxygen hardens it into a usable adhesive.

There is no catalyst present or vapors can't excape. Super glue is activated by moisture, white glue simply dries... basically it doesn't stick because it's engineered to not stick!

because it is activated by the air..in the bottle its not really glue its just stuff......but once in contact with the air it starts to bond with things......
