I want to FTP but I don't want my IP logged. How can I erase these records from the server?
*I do NOT want to use a proxy nor one of those anonymizer services like findnot.com, I want to be able to upload DIRECTLY to the server and then somehow delete the records that have my IP. Thanks.

If you are connected to the server without using some kind of proxy, you have no control over whether they choose to record your IP. Obviously, you can't erase records from someone else's server any more than you could delete files off of my computer.

You don't. Literally, that's the answer. If you're logging in to another machine's FTP service, and you don't have the ability or desire to go through a proxy, anonymizer or similar go-between, you're out of luck.

Here are the exceptions to the above rule:

#1: your ISP provides you a temporary, shared IP address -- it will be logged, but perhaps other users on your ISP will get the same address at other times. Your ISP could still give you up to the authorities if subpoena'd, as they'd know *when* you had that IP, so it's not really a solution.

#2: you control the server with the FTP service, and so can manually go in and delete the logs.

#3: the person running the FTP service purposefully discards any and all connection/transfer logs -- of course, even if they said they did, you're trusting their word without any means to verify.

#4: you hijack a clueless wireless user's internet connection, and leave their IP address instead of yours on the server -- not legal, however.

You cant! Just as the other guy said, you have to give an IP to upload files, otherwise the server will not know where to get the files from! This is the problem with static and dynamic IP's.

If you don't have access to the filesystem where the logs are stored, you can't. Sorry.

Go ahead and thumbs-down me, but I answered your question exactly how you asked it. If you can't hack the FTP server, and you don't have access to the ftp logs, you can't do what you want to do. It's that simple.

The answerer below gave some creative suggestions, but he ultimately said exactly the same thing. If you don't have access to the remote server's file system, you can't delete the logs, period. You can try to spoof your IP, but you said in your question that you weren't interested in that, so I didn't offer any suggestions for it.
