This referes to enzyme specificity. Just like only one specific key will work with one specific lock ; only one specific enzyme will react with one specific substrate.
Dehydration synthesis: ENZYME + 2 SUBSTRATES------> Enzyme Substrate Complex-----> New compound + water + enzyme is released to be used again.

Hydrolysis (Digestion) is the reverse of the above.

The enzyme has a certain shape that only the proper substrates will fit. ... just like a lock and key have to fit together.

They match together, the substrate is joined, separated, or whatever, and they separate.

The enzyme itself is not changed during the reaction.
