Why did they (or still) wrap the head of the deceased with cloth under the chin and over the head? Like they are trying to keep the mouth closed.

The mouth cavity can express a foul smell. Even with embalming there can be an odor because the softer inside tissue breaks down faster.
Way back when they had no other means (or were less likely to sew the mouth shut) they people in the community who helped would simply take a soft cloth (it was more dignified than a rope or a string) and tie the chin to the bone simply so it would stay shut and flies would not congregate on the mouth of the loved one. It was simply a neccessary part of the old way they did things Not so much now that in our country we have airconditioned places with closed doors to protect the bodies... (less flies present) and they can neatly suture up the mouth and it not be noticed (maybe the wire the teeth together too?)

In death the eyes and mouth try to open, that is why one of the adages about death. It is a bad name about Bill as it is said "Bill will steal the pennies off a dead mans eyes". In these days the eyes were pushed shut and a coin was placed on each eye to hold it shut. The mouth was tied shut by a large coil. At viewing the material is removed the coins placed into their hand to pay the ferryman. God Bless You and Our Southron People.

With death comes a locking of the jaw open as muscles relax.. It is to prevent it happening, as it doesn't go back closed easily once locked open. I've been present when several relatives died and have experienced this.
