The key here is a super simple craft. These people are going to want quick results. They will not stay focused long enough. I suggest plastic canvas. I also like working with felt. Michael's has small cars made of wood that you assemble and paint. You can even race them with the use of rubber bands. Paper Mache, Small puzzles (like 500 pieces or so), small ceramics.

I'd suggest something that's small and relatively portable.

Like knitting, crochet, photography, or even crossword puzzles.

Or something that involves movement.

Like boxing, ballet, or a martial arts of some sort.

(Basically, even for people with ADD, it is possible to become interested in any hobby, even without the ease of instant gratification, although it is probably better if it's something you can zone out on.)

If it's for a kid, magic should do the trick. I mean illusions, slight of hand, not the role playing game. Teach them a couple simple tricks, buy 'em a book, and you'll be surprised how much they can focus on a little hocus pocus.

As one who has ADD, you need something that you are really interested in so you can hyperfocus on whatever you are doing. Anything else will just cause frustration in your life. For me, it was photography.

I would think anything that keeps their mind busy. A match game a board game, something they have to concentrate on.
