Splinter Cell: Chaos Theory. Alot of replay value and a good challenge there. The Co-Op and Vs. modes are alot of fun too. Plus Sam Fisher's just so frigging cool.
Also The Prince Of Persia: The Two Thrones. Not as much replay value, but good for a once through.

Halo 2 obviously. Course battlefield 2 modern combat is the pwnage as well.
