You are making me hungry!!!. I like to stuff eggplant, I like it on Pizza, I like it breaded and in the oven with sauce and cheese like a pizza, delicious!!

I think eggplant is just OK. I will eat it but I don't relish it. My favorite eggplant dish is baba ganouj. Eggplant, olive oil, tahini, yogurt,, salt, lemon juice. The yogurt is important in cutting the bitterness of eggplant.

Yes, I love eggplant. Fried, grilled, baked or sauteed. Yummy!

I have a friend that makes the best eggplant casserole. It's almost like a vegetarian lasagna and man was it good.
