inside your home or outside? I guess be prepared to have to give the animal up to a slaugher house if you are going pigs and sheep. If not birds and rabbits are a little smaller, cleaner, and easier to handle and you can keep them indefinantly. I thought Ag classes stopped doing that.

If you want a short term project that is easy and small, go with a meat pen. They are one of the easier ag projects and usually you raise them and show them at about 3 months old then they are out of your hair or you can keep them for breeding.

If you want a big animal then go for a lamb or a goat. They're fun!

If you have room for an outdoor pen I would totally choose a hog. If the animal has to be inside go with some type of poultry (bantams are great). Both can be found cheap and make wonderful pets : )
If you don't plan on keeping it, get something that will sell easily or can go to the slaughter house.
Good Luck

I think rabbits would be easiest and if your not a farm girl, more appealing. (If rabbits are an option, of course.) You could do a breeding project.. genetics and stuff.

Dutch are fun breeds to do for projects; you could have two perfectly marked parents and still end up with a badly marked baby.

Pigs are the most popular. Plus they are great animals. Good luck.

You should try a pygmy goat. they are very easy to take care of and are super small. they don't eat as much as hogs do and you can train them to do tricks and cute stuff.
