Is it because Capulet really likes Paris and is happy that the "Capulet family line" will continue, or is it simply because he is so infuriated that Juliet refuses what he is telling her to do?

Because he chose him for her for an arranged marriage. He had money and came from a good family. Juliet was complicating things by objecting to his choice. Girls weren't supposed to challenge their fathers' authority like that back then.
