Assistant Professor:
Assists a Full Professor, and he is not yet a full professor.
Associate Professor:
Is a Professor who is a colleague to another Professor and not necessarily teaching the same subject...
Full Professor:
Is someone who has been having his PhD for more than a certain number of years (7 Years minimum) and has presented some New Research Papers....He can get an Assistant Professor to him if needed, and of course has Associate Professors in the University or wherever he is...

Depends on the institution, but it boils down to education and tenure.
An assistant professor probably has only a Masters Degree.
An Associate has the PhD but not the tenure.

One word Tenure which the full professor has....an assistant is usually a grad student, an associate doesn't have tenure a secure job with the University.

money. an associate is usually entry level and it continues upwards to assistant and full.
