Before you ask for apology, first recall your memory and find the cause for that guilt. Because no matter how many times you ask for apology, but sometimes marks stay there. You can't undo by apologizing but you can do something to get that person's self-respect. If you can spend some money on flowers or gift buy for that person, this way you can start all over and when you got chance you can express your guilt.

Apologize, and learn from it to always look at an issue from the other person's perspective before your say something that might offend them. Just mentally put yourself in their shoes. It only takes a second of thought, and immediately puts things into a different perspective for you. Many times this will help to keep you from saying the wrong thing at the wrong time.

I don't know about guilty. But I often feel foolish - and rightly so, I guess.
What I do is remove myself from the scene as quickly as possible and make excuses for myself.
It never works.

Shrug it off.
Tough love.
But if you wish to smooth things out without backing down, get them a cup of coffee or something. A token of goodwill.

Appologize. I had to do it this morning, as a matter of fact. I was nervous, but I needed to do the right thing. I feel so much better now (and Im sure she does, too).

I go and talk to them and try not to make excuses for what I said. I apolize and ask them to forgive me. Honesty is still the best policy. Asking forgiveness helps get over the bad and hurt feelings and helps you to forgive yourself. And don't beat yourself up over it, we all make mistakes and for whatever reason say things we don't mean.
