A Stale Fish is a trick you can do snowboarding. There are quite a few variations but the most common application of this trick is in the Halfpipe.

Go up your frontside wall and as you pop off the lip, bring your board up and grab your heelside edge between your bindings with your rear hand (grab around your leg, not between. That's a Roast Beef). For added style bone-out your rear leg. Hold the grab for as long as possible, stomp the landing and pull something big on the next hit.

I haven't got a clue why it's called a Stale Fish. There are so many stupid names for snowboard tricks:

Japan Air
Meloncoly
Crooked Cop
Roast Beef
Canadian Bacon
Chicken Salad
Crail
Mute
Grasser
Method

the list could go on and on.
