A tracking cookie is doing exactly what its name suggests - keep track of how many times you've visited the site. The website then knows the frequency, and the time-of-day, of your visits. They may even be able to see how you manuevered through the website, what areas you go to, etc.

If you don't want this to be stored, then delete the tracking cookie.

In my opinion, the cookie exists solely to reveal your web activity to others, and that is BAD in my book.

Contrary to popular belief, cookies can't really track you.

They are just completely passive text files (like a word document, but even simpler than that) which are placed on your computer by a website. There is no information inside the cookie other than the information you already gave the website voluntarily.
