I look at Literature as defining a section of study which entails the use of written words. Literature also defines things that were important enough for people of a society to put into written words.

It depends on the context. For me literature is a work of fiction that is written with the intent to create something with unique value, and highest possible quality. Or in other words, art. Not just a product that will sell based on a formula that has worked in the past, but something that has intrinsic value based on the level of technical mastery and the degree of creativity and talent that is evident in the work.

I think of poetry, the classics, etc.
I do not categorize today's modern books (Stephen King, Nora Roberts...) as literature. To me, literature is the classics (Poe, Shakespeare, Michener, Dickens).

Put on paper, and some English teacher who thinks he's god/philosophical will at some point actually ask you to write a paper for him about the meaning of literature. Personally it's my view that teacher are using students to assist in there quest for higher education such as a theseus and crap like that.

"Literature" means written words, ideas, pages, and books to me.
English Literature to me means limericks, lyrics, poems, prose, riddles, stories, tales, and verse. From Beowulf to Bede, Chaucer to Langland, and Kempe to Dunbar.
