Rainbow means - DIVERSITY.
As the 'gay community' has such an eclectic and diverse group of people in - each colour of the rainbow could represent that group.
You have gay, lesbian, bi-sexual, transgendered - orientation
You have all nations - culturally
You have celebate, vanilla, kink, leather - flavour
You have sissy-girl/boy, flamboyant, jock, butch - attitude
You have bar-flies, sports-jocks, activists, professionals - interests
and of course
You have parent, friends, and colleagues of gay people - support.
Rolling that all together, you have a diverse and absolutely colourful community however could you not describe it with one icon such as a 'rainbow'.

the Rainbow is a symbol of Goddess in general. But more specifically, it seems to refer to the Greek goddess Iris, who was the wife of Zeus, and messenger to Hera.
The rainbow flag has become the easily-recognized colors of pride for the gay community. The multicultural symbolism of the rainbow is nothing new and it plays a part in many myths and stories related to gender and sexuality issues in Greek, Native American, African, and other cultures.
red: light;
orange: healing;
yellow: sun;
green: calmness;
blue: art;
lilac: the spirit;
In 1978, Gilbert Baker of San Francisco designed and made a flag with six stripes representing the six colors of the rainbow as a symbol of gay and lesbian community pride...

The rainbow is the symbol of diversity. Years ago when the Reverend Jesse Jackson Jr. ran in the Democratic primary to be nominee for the presedential race, he called his group the rainbow coalition. To me it has meant diversity inclusive of all people ever since.

As far as it being a symbol of GLBT people, I like how it symbolizes that people of many different backgrounds can be GLBT and inclusiveness in general. From a strictly aesthetic point of view, seeing a rainbow in the sky or on a flag is simply uplifting.
