and can anyone from other races/countries be knighted?

I can only speak on British knighthoods. There are no privileges other than being able to impress certain people and book a table at good restaurants. Depending on your order of knighthood you might get to attend occasional church services with the Queen for the Order (once a year or less).

Race is immaterial - there are black, Asian and Oriental knights. As for nationality, you have to be British, a Commonwealth citizen living in Britain, or be from one of the colonies or Commonwealth countries which still allows titles (I'm not sure how many still do).

Non-Commonwealth citizens can receive honorary knighthoods, meaning they can put the initials KBE or Kt after their names but cannot call themselves Sir. They still get a medal but I'm not sure if they wear it - it is not draped over their necks at their investiture as is done for 'real' knights.

You get to call yourself "sir".

Any race can be knighted. People from other countries might be knighted--it depends on the laws of their home country (i.e. Americans can't be knights by American law. so any knighthood would be strictly honorary.)
