Yes I do notice and it's enjoyable.
When you get lost in a universe created by a master, you join with the action in an emotional way. That ties you to the characters and what you're seeing. It not only means many things happen in a short time, it also compresses time for the entire experience during the viewing. It feels like you're a part of it.
Newer movies always seem to have short burst activity and quick action changes.
I love the old classics in particular. Singing in the rain......The Sound of Music....anything that flows. :)

Have you ever really notice that no one gives a ****. I mean the movie would be boring if there was no action. And next time be more specific. I had to use my descretion to decide if you were talking about " In real Life" while watching the movie or "In the movie" while watching the movie
