If I was to recommend one state in India it would be Rajastan. Amazing history and incredible forts, beautiful painted houses, incredible artwork, jewellry and fabric. Not exactly off the beaten track however.
Goa has amazing tropical beaches and an interesting colonial history. Good night life in the north and cheap drinks etc. Hampi temple complex definitely worth a visit i would say +++ however and some beaches could easily be mistaken for benidorm given the number of lobster read, overweight pensioners that crowd the san.
Kerala is know as God's Own Garden for good reason, it is possibly even more beautiful than Goa, and the people are friendlier because they get less tourists.
It all depends on how long you're going for. I recently travelled the entire length of the West coast, from Kanyakumare to Rajastan, then across to Delhi and thence to Darashala in Himachal Pradesh, in five weeks. It was tiring but worth it as I am the type to get bored if i sty in one place for too long.
I recently asked a similar question, check out the advice I was given. http://uk.answers.yahoo.com/question/index;_ylt=AuO6QIQrztP6XrzTvr81fr8gBgx.?qid=20061031085149AAxEO7I
The only thing I would add is have an amazing time and don't be scared cos India is extremely safe compared to other destination. As lonely planet says 2India rewards those who go with the flow". Couldn't put it better myself, we went with the flow and among other things ended up as guests of honour at a wedding, it was an amazing experience. Oh, and avoid milkshakes. People warn you about the water but forget to mention the milk, don't drink it cold cos its not pasteurised.

you desire a visa for India - it is valid for six months from the date of subject. It took purely an hour to get one on the India severe fee in London (approximately £30) yet i might enable a week, everywhere you're. you're in a position to deliver it off by way of positioned up for a visa - examine the cyber web internet site of your community Indian Embassy. you will desire visas additionally for Eygpt and Sri Lanka - in case you are able to discover their embassies closest to you they might have web pages offering suggestion on the visas, how long they take to get, and how plenty they fee. pay attention of embassy establishing hours - they are generally purely open for some hours contained in the mornings, and you will possibly be able to choose ot get there early in the event that they are busy! India is an outstanding place in case you pass with the pass - in spite of the undeniable fact that it is stuffed with chaos and insanity too! in my view, i might propose you to keep away from the huge cities like Mumbai and shuttle around. in case you have a month you will possibly be able to desire to work out some places or in basic terms extremely detect one section - for this i might propose the two Kerala contained in the South (backwater cruises, animal parks, tea plantations, seashores) or Rajasthan that's west of Delhi (previous forts, temples, blue city, many breathtaking cities, artwork of artwork on homes, tiger park). ensure you convey smiles, endurance and loo paper!
