It depends on which one.
I know FFXI really well, and in that one, raising your STR raises the maximum amount of damage you can do. While raising attack brings you closer to doing the maximum.
DEX is tied to your accuracy. (2DEX=1ACC)
VIT is tied to defense (2VIT=1DEF)
AGI is tied to evasion (2AGI=1EVA)
But it's a little more complicated than that. You can't just load up on +DEX and skip +ACC.

Strength controls how much damage you do to opponents when attacking them with a normal attack.
I am fairly certain that Accuracy, Defense (DEF), and Evasion (EVA) are all their separate attributes.
