I think "loving" is hardly ever a verb (except in McDonald's commercials) and almost always an adjective.

"I'm loving it" got to BE a slogan BECAUSE it's pretty incongruous. "Loving" is usually an adjective meaning tender, gentle, but not necessarily full of love.
