It started with the evolution thing, when the continents seperated from a super continent. Thats why several southern countries i.e. S.Africa and Antartica have penguins. The penguins all were living in an area of land that was split up, this are of land included Antartica. And they have been stuck there since then.

Penguins evolved in the southern hemisphere just as auks evolved in the northern hemisphere. They fill the same ecological niche. Most penguins do not live in Antarctica but on temperate coasts and sub-Antarctic islands with one species on the equator in the Galapagos islands. Think of penguins as southern hemisphere birds rather than Antarctic birds.
