In two episodes they encountered the energy barrier at the edge of the galaxy. Yeah, that's utter nonsense, what's worse is it was shown as a ribbon which could have easily been flown over or under. But in any case, even if they had penetrated the barrier, it still would have taken them a fair part of forever to get to another galaxy. Even in the Next Generation, only a portion of the galaxy has been explored and intergalactic travel is thought of as only possible with some new technological breakthrough.

Yes, the aliens from the Andromeda galaxy did hijack the Enterprise into intergalactic space. However, they added some device to greatly increase speed and it was still implied that the voyage would take years at least. They did not get anywhere near another galaxy before returning.

They generally travelled within the alpha quadrant, within our galaxy. However, in one episode, the ship was commandeered by a group of aliens from the Andromeda galaxy, and they left our galaxy. They were part way there when they managed to get control back.
Sorry, I can't remember more, or the name of the episode.

Technically they never engaged in "inter-galactic" travel, because they never reached another galaxy, as said above they did occasionally leave our own galaxy however. It is also true that they did travel nearly exclusively within the "Alpha Quadrant" roughly 1/4 of the galaxy.
