Only country??? Just one?
Belarus has never had circulating coinage since it became independent in 1992.
Zimbabwe does not presently have circulating coins, either. The last circulating coins they issued ($2 and $5 coins in 2002) were withdrawn fron circulation long ago due to miniscule face value. In 2002, the exchange rate was Zim $55 = US $1, On August 1, 2006, the exchange rate was Zim $100000 = US $1. At that time, Zimbabwe remontetized (1 new Zim dollar = 1000 old Zim Dollars), and the current rate is about 3000 new Zim dollars = US$1. They have the world's highest inflation rate. When they issued the new Zim dollars in August 2006, the banknote denominations ranged from one cent to $100000.
That's two. Given time, I'm sure I could come up with more.

P.S. The Vatican does indeed issue coins and has for many years. Before the Euro, they were valued at par with the Italian Lira. Liechtenstein uses Swiss Francs. Ecuador and El Salvador both ceased to issue their own currencies and now use the US Dollar.

north pole is not a country.

no country do not have any coin currencies. however, a lot of them have adopted forein currencies, like the U.S. Dollar or the Euro.

for example, most of the little (microscopic!) Carrabean coutries do that.

and for a certain time, Argentina did not have ANY money when they went on bankruppcy. they used barter

Zambia has no coins anymore due to depreciation of the currency. 100 Ngwee = Kwacha 1. Kwacha 50,000 = approx. USD10!
The same probably applies to Zimbabwe nowdays.
