The best and most romantic cd to buy is Dexter Gordon's album called Ballads. The whole album is amazing. he plays tenor sax, his sound is very romantic. get it.
Also, Verve records puts out collection by various jazz musicians called Jazz For Lovers. The Stan Getz volume is fantastic and I'm sure that the Ben Webster is also. Those guys specialized in ballads.
I hope you trust these answers. I've heard lots of jazz, and these are the best I know.
PS-John Coltrane also has an album called Ballads.
Another PS- The music i've suggestd is instrumental, no singing.

Miles Davis- "Sketches Of Spain" is #1 for me, maybe "Miles Ahead" if you want things a little brassier and uptempo.
John Coltrane- "Lush Life" is a beautiful recording. "My Favorite Things" shows Coltrane at his sweetest, playing standards.
Lester Young- "With the Oscar Peterson Trio" is an oldie, but there have been reissues. Try to get the 1997 Polygram, has bonus tracks. Trad stuff featuring Lester's gorgeous, soft sax tones.

Muddy Waters has some very romantic jazzy fast blues songs. They are a lot more rare than his others but if you can find them i think you`d be happy.
